Many people use no carb diets to keep cravings at bay and help them feel better. Here are some of our favorite no carb recipes to help keep your carvings at bay.
Eggs and Vegetables in Coconut Oil
Coconut oil (heat in skillet on stove)
When oil is hot add:
1 pkg frozen vegetable mix (thawed)
3 to 4 eggs
Lightly move the food around in skillet to desired doneness. Season lightly with salt and pepper as desired.
Sausage and Egg Breakfast Treat
1/2 pkg sausage
4 to 6 eggs
Greens (optional: kale, spinach, parsley etc.)
Crumble sausage and cook. Add in eggs and greens and continue stiring until desired doneness. Serve hot or warm.
Bacon Wrapped Mini loaves
Lightly grease mini muffin pan
Combine 1 lb ground meat with one quarter cup coconut milk, 2 cloves garlic (more if desired), 1/3 cup fresh chives chopped, 1/4 cup fresh parsley and 6 slices of bacon minced. Gently place into muffin tins. Cut remaining pieces of bacon and form X over the mini loaves. Bake at 400 degrees for 30 minutes. Serve hot and lightly season with salt and pepper if desired.
Chicken Lettuce Wrap/Salad
3 T coconut oil
1 lb chopped chicken breasts
4 oz. chopped mushrooms
1/2 small sweet onion chopped
3 cloves fresh garlic, minced
2 green onions, finely chopped
1 handful of cilantro, chopped
1 lemon, juiced
1/4 c reduced gluten free soy sauce
1 t chili garlic sauce
1 t sesame oil
iceberg or romaine lettuce
1 avocado, sliced thin
Directions: Saute chicken in coconut oil. set aside. Saute vegetables in coconut oil and lightly toss with chicken. Add in gluten free soy sauce and lemon juice. Toss again. Add in chili sauce and seasame oil and toss once more. Place on large leaf of lettuce and top with avocado slices. Roll up burrito style to serve. Delicious
Bacon, Lettuce & Tomato Salad
Fry 3 pieces bacon crisp and set aside
While bacon cools make salad from ice berg or romaine lettuce. Chop one hard boiled egg and place on top of lettuce. Top with chopped tomato and some grated swiss or provolone cheese. Top with bacon and serve with ranch dressing on the side.
Deep Fried Chicken Wings with Barbecue Sauce and vegetables
Heat Coconut oil and deep fry chicken wings (just barely cover with oil) Turn as needed. Place fried wings in crockpot with no carb barbecue sauce. Let simmer to absorb flavor. Serve with salad on the side or fresh steamed vegetables.
Egg Pizza Casserole
Whisk 4 to 6 eggs with 1/2 cup cream and 1/2 cup pizza sauce. Pour into 9X12 greased casserole dish. Crumble cooked ground sausage on top. Top with fresh chopped garlic and Italian Seasoning (to taste). Layer 4 ounces pepperoni on top. Sprinkle with grated mozzerella and add in some chopped onion and tomatoes if desired. Bake at 350 for 35 to 45 minutes (ovens vary so check for doneness starting at 35 minutes). May add or reduce eggs as desired. Some people prefer more of a quiche effect so would want more eggs.
Bacon and Eggs (Breakfast for dinner)
Fry up some bacon and then cook eggs as desired (omelet, fried or scrambled) and serve together.
Don’t worry, there are also no carb recipes for snacks too.
Guacamole Stuffed Sweet Peppers
1 package sweet peppers
Guacamole (store bought or homemade)
Crispy fried bacon
Slice the stem end off of peppers and then slice pepper length wise. Seed peppers as needed. Stuff with guacamole and then top with a piece of bacon. Your guests will love this recipe.
The above recipe could also substitute cream cheese for guacamole if desired. Make some of each. Your guests will love them.
Jalapeños stuffed with Cream Cheese
Put on gloves
Slice stem end off of jalapeños and the slice as above lengthwise. Stuff with cream cheese and top with bacon bits.
Always wear gloves when working with spicy peppers and then wash hands completely after removing. Avoid touching face, especially eye area, after preparing this recipe.
Ants on a Log
Slice Celery in finger sized lengths. Fill with peanut butter and place some raisins (ants) on top.
Tuna salad stuffed Celery
Prepare one can tuna with chopped onion, ranch dressing (to taste and desired thickness) and chopped pickle. Fill celery with this mixture and serve.
Last but not least let’s get some dessert.
One of the most versatile dessert foods. Cheese cake is ideal topped with fresh fruit or eaten by itself. Either way, you can buy it fresh made or make your own. Here’s our favorite recipe:
3 8 ounce packages cream cheese (room temperature)
1 1/2 teaspoon vanilla
1 1/2 teaspoon fresh lemon juice
1 1/3 cups sugar free equivalent
1/4 cup sour cream
One cup almond meal
2 T melted butter
2 T sugar substitute
Mix ingredients for crust and press into springform pan. Bake at 375 for 8 to 10 minutes until lightly browned.
Remove from oven and turn oven temperature up to 400 F.
Mix cream cheese and beat until light and fluffy. Add remaining ingredients scraping bowl with rubber scraper. Scrape bowl completely and lightly spread over pre baked crust.
Put cheesecake into oven and turn down heat to 200 F immediately. Bake for 60 to 90 minutes checking back often.
Cheesecake is done when firm to touch but still soft. Serve chilled with favorite fruit topping.
